King Oyster Mushrooms (Pleurotus Eryngii)

Pleurotus eryngii, commonly referred to as King Oyster mushroom, is a highly regarded edible mushroom species cultivated worldwide. It boasts several common names including King Trumpet and King Brown, though it is universally referred to as "King" due to its prized culinary attributes. Widely considered one of the most flavorful mushrooms, the King Oyster is a favorite among professional chefs and home cooks alike. Its rich, earthy notes make it a staple crop for commercial mushroom farmers. 

Successful cultivation requires precise environmental conditions. The King Oyster thrives at temperatures below 21°C with high ambient humidity levels. Compared to other mushroom varieties, it necessitates tighter controls over factors like temperature, moisture, and airflow to reliably initiate pinning and produce consistent, bountiful yields. Those who master its cultivation are rewarded with a premium mushroom admired by foodies globally.

  • Incubation period: 21 days (depends on substrate).
  • Incubation temperature: Room temperature between 21 - 24°C. Do not let the substrate temperature exceed 30°C.
  • Pinning temperature: 10 - 15°C 
  • Pinning humidity: 95 - 100% relative humidity
  • Fruiting temperature:
    • Range: 15 - 21°C
    • Ideal: 15 - 17°C
  • Fruiting humidity: 85 - 90% relative humidity
  • CO2 concentration: 500 - 2000 ppm. Low levels of CO2 will form larger caps and shorter stems. If growing for large stems, increase CO2 levels.
